Chicken Lollipops

Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon hot sauce
  • 1 teaspoon vinegar
  • 1 teaspoon sugar
  • 1 tablespoon finely chopped spring onions (optional)

Instructions

  1. Prepare the Chicken:
    • Separate the drumette and the wingette of each chicken wing. Remove the skin.
    • For the drumette: Hold the thinner end, and using a knife, scrape the meat down toward the thicker end to form a lollipop shape.
    • For the wingette: Locate the joint, cut around it, and push the meat to one end to form a lollipop.
  2. Marinate the Chicken:
    • In a large bowl, combine soy sauce, ginger-garlic paste, red chili powder, garam masala, and salt. Mix well.
    • Add the chicken lollipops and coat them thoroughly in the marinade. Let them marinate for at least 30 minutes in the refrigerator.
  3. Prepare the Batter:
    • In another bowl, mix all-purpose flour, cornstarch, baking powder, red chili powder, black pepper, and salt.
    • Gradually add water to the dry ingredients and whisk until you have a smooth, thick batter.
  4. Fry the Chicken:
    • Heat oil in a deep frying pan over medium heat.
    • Dip each marinated chicken lollipop into the batter, ensuring it is well-coated.
    • Carefully place the coated chicken lollipops into the hot oil. Fry in batches until they are golden brown and cooked through, about 5-7 minutes per batch.
    • Remove and drain on paper towels.
  5. Prepare the Sauce:
    • In a small saucepan, combine soy sauce, tomato ketchup, hot sauce, vinegar, and sugar. Heat gently until the sugar dissolves.
    • Stir in chopped spring onions, if using.
  6. Serve:
    • Serve the chicken lollipops hot with the prepared dipping sauce on the side. Enjoy as an appetizer or snack.
