Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tbsp oil or ghee
  • 1 large onion, finely sliced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 1/2 cup plain yogurt
  • 1/2 cup coconut milk or heavy cream
  • 1/4 cup ground almonds or cashews (optional, for extra creaminess)
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp garam masala
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt, to taste
  • 1/4 cup water or chicken broth (if needed)
  • Fresh cilantro, chopped (for garnish)
  • Toasted slivered almonds (optional, for garnish)

Instructions:

  1. Prepare the Ingredients: Combine the yogurt, ground almonds (if using), turmeric, coriander, cumin, and garam masala in a bowl. Stir well and set aside.
  2. Cook the Onions: Heat the oil or ghee in a large skillet or pot over medium heat. Add the sliced onions and sauté until golden brown, about 8-10 minutes.
  3. Add Aromatics: Stir in the garlic and ginger, cooking for 1-2 minutes until fragrant.
  4. Cook the Chicken: Add the chicken pieces to the skillet, seasoning lightly with salt. Sear the chicken on all sides until lightly browned, about 5 minutes.
  5. Simmer the Sauce: Lower the heat to medium-low and pour in the yogurt mixture. Stir well to coat the chicken. Add the coconut milk or cream and stir to combine. If the sauce seems too thick, add water or chicken broth to reach your desired consistency.
  6. Simmer and Finish: Cover and simmer gently for 20-25 minutes, stirring occasionally, until the chicken is tender and the flavors have melded.
  7. Serve and Garnish: Taste and adjust seasoning if needed. Garnish with fresh cilantro and toasted almonds, if desired. Serve hot with rice or naan.

This Chicken Korma brings a perfect blend of spices and creaminess to your table, making it a beloved comfort food that’s both indulgent and approachable!
