Ingredients:

  • 8 small flour or corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: sliced jalapeños, avocado, extra sour cream

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the garlic, cumin, and chili powder, and cook for another minute until fragrant.
  3. Stir in the shredded chicken and half of the enchilada sauce. Cook for a few minutes until the mixture is heated through and well combined. Season with salt and pepper to taste.
  4. Warm the tortillas in the microwave for about 20 seconds to make them pliable.
  5. Spread about 1/4 cup of the chicken mixture down the center of each tortilla, then roll them up tightly.

  7. Pour the remaining enchilada sauce over the top of the enchiladas, spreading it out to cover them evenly.
  8. Sprinkle the remaining cheese over the top of the enchiladas.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
