Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • ½ cup Caesar dressing
  • ¼ cup grated Parmesan cheese
  • 4 anchovy fillets, finely chopped (optional)
  • Juice of 1 lemon
  • ½ cup heavy cream
  • Fresh parsley for garnish (optional)

Instructions:

  1. Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5-6 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.
  2. In the same skillet, heat the remaining tablespoon of olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the fresh spinach and cook until wilted. Season with a pinch of salt and pepper.
  3. In a small bowl, whisk together the Caesar dressing, Parmesan cheese, chopped anchovies (if using), lemon juice, and heavy cream. Pour this mixture into the skillet and bring to a simmer.
  4. Return the chicken breasts to the skillet, spooning the sauce over them. Let the chicken simmer in the sauce for 3-4 minutes to absorb the flavors.
  5. Serve the chicken on top of the spinach, drizzled with extra sauce, and garnish with fresh parsley if desired.

Enjoy your Chicken Caesar Florentine, a perfect blend of creamy Caesar dressing and rich spinach for a hearty, flavorful meal!
