Chicken Asado is a flavorful and savory dish, popular in Filipino and Latin cuisines, known for its tender chicken simmered in a rich, tangy tomato-based sauce. The dish gets its depth from ingredients like soy sauce, garlic, onions, and spices, which blend beautifully with the sweetness of tomatoes and sugar. Ingredients:

  • 1½ lbs bone-in chicken thighs or legs
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 can (8 oz) tomato sauce
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp brown sugar
  • 1 bay leaf
  • 1 tsp paprika (optional)
  • ½ tsp ground black pepper
  • Salt to taste
  • 1 cup water or chicken broth
  • 1 carrot, sliced into rounds (optional)
  • 1 potato, peeled and cubed (optional)
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Marinate the Chicken: In a large bowl, marinate the chicken in soy sauce, vinegar, and black pepper for about 30 minutes. Set aside.
  2. Sear the Chicken: Heat vegetable oil in a large skillet or pot over medium heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken pieces until golden brown on all sides. Remove and set aside.
  3. Sauté the Onions and Garlic: In the same skillet, add the chopped onions and garlic. Sauté for 3-4 minutes until softened and fragrant.
  4. Add the Sauce and Simmer: Pour in the tomato sauce, reserved marinade, brown sugar, bay leaf, paprika, and water or chicken broth. Stir to combine. Add the chicken back to the skillet, cover, and let it simmer on low heat for 30-40 minutes, or until the chicken is tender and cooked through.
  5. Optional Vegetables: If using carrots and potatoes, add them during the last 15 minutes of cooking and simmer until they are tender.
  6. Serve: Once the chicken is cooked and the sauce has thickened, taste and adjust seasoning with salt if necessary. Garnish with fresh parsley or cilantro and serve over steamed rice or mashed potatoes.
