Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 slices of provolone or mozzarella cheese
  • 4 sandwich rolls or slices of your favorite bread
  • 1 cup fresh spinach leaves
  • Optional: fresh parsley for garnish

Instructions:

  1. Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing into thin strips.
  2. Prepare the Alfredo Sauce: In the same skillet, add 1 tablespoon of butter and the minced garlic. Sauté until fragrant, about 1 minute. Pour in the heavy cream and bring to a simmer. Reduce the heat and stir in the Parmesan cheese until the sauce thickens slightly, about 3-5 minutes. Season with salt and pepper to taste.
  3. Assemble the Sandwiches: Spread the remaining tablespoon of butter on the inside of each sandwich roll or bread slice. Lightly toast the bread in a skillet or under a broiler until golden brown.
  4. Layer the Ingredients: On the bottom half of each toasted roll, layer slices of chicken, followed by a spoonful of Alfredo sauce, fresh spinach leaves, and a slice of provolone or mozzarella cheese. Place the top half of the roll on the sandwich.
  5. Optional Step: If you prefer a melted, gooey cheese, place the assembled sandwiches under the broiler for 2-3 minutes, just until the cheese begins to melt.
  6. Serve: Garnish with fresh parsley if desired, and serve the sandwiches warm.

These Chicken Alfredo Sandwiches are perfect for a quick yet indulgent meal. Pair them with a side salad or some roasted vegetables for a complete and satisfying dish.
