This French-inspired dish consists of flaky puff pastry filled with a rich, savory mixture of mushrooms, chestnuts, and vegetables, all enhanced by the deep flavors of red wine. The filling is encased in golden pastry, creating a beautiful and elegant pie that’s sure to impress guests. Whether served for dinner or at a festive gathering, this pithivier is a deliciously warming dish.

Ingredients:

  • 2 sheets of puff pastry, thawed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms (such as chestnut, cremini, or shiitake), finely chopped
  • 1 cup cooked chestnuts, chopped
  • 1/2 cup red wine
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • 1 egg, beaten (for egg wash)
  • Optional: 1 tablespoon balsamic vinegar for extra richness

Instructions:

  1. Prepare the filling: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until softened and fragrant. Add the mushrooms and cook for 5-7 minutes until they release their moisture and begin to brown.
  2. Add the chestnuts and red wine: Stir in the chopped chestnuts, thyme, rosemary, salt, and pepper. Pour in the red wine (and balsamic vinegar if using) and simmer for 8-10 minutes, or until the liquid has mostly evaporated and the mixture is thickened. Remove from heat and allow the filling to cool completely.
  3. Assemble the pithivier: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry sheets. Cut one sheet into a large circle (about 9 inches in diameter) and the second sheet into a slightly larger circle (about 10 inches in diameter).
  4. Fill the pastry: Place the smaller pastry circle on a parchment-lined baking sheet. Spoon the cooled chestnut and mushroom filling into the center, leaving a 1-inch border around the edge.
  5. Seal the pastry: Brush the edges of the pastry with beaten egg. Place the larger pastry circle on top, pressing the edges together to seal the filling inside. Use the back of a knife to create decorative lines from the center outward. Brush the entire surface with the remaining egg wash.
  6. Bake: Bake the pithivier for 25-30 minutes, or until the pastry is golden brown and puffed.
  7. Serve: Let the pithivier rest for a few minutes before slicing. Serve warm, paired with a green salad or roasted vegetables.

This Chestnut, Mushroom & Red Wine Pithivier is a rich and satisfying dish, offering a beautiful combination of savory flavors and flaky pastry. Perfect for vegetarians and anyone seeking an elegant meal!
