Cherry Jam

Cherry Jam is a sweet, tangy preserve that captures the intense flavor of fresh cherries at their peak. With just the right balance of sweetness and natural tartness, this homemade jam is perfect for spreading on toast, serving with scones, or using as a topping for desserts like ice cream or cheesecake. Made with a few simple ingredients, this jam is a great way to enjoy cherries all year round, offering a delicious and versatile addition to your pantry. Whether you make it for yourself or as a gift, cherry jam brings a burst of fruity goodness to any meal.

Ingredients:

  • 4 cups fresh cherries, pitted and halved
  • 2 cups granulated sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract (optional)
  • 1 packet (1.75 oz) fruit pectin (optional, for a firmer set)

Instructions:

  1. Prepare the Cherries: Pit and halve the fresh cherries. You can roughly chop them if you prefer a chunkier texture in your jam.
  2. Cook the Cherries: In a large saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the cherries release their juices and the sugar dissolves—about 10-15 minutes.
  3. Simmer the Jam: Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes, stirring frequently, until the jam thickens. If you’re using pectin, follow the packet instructions and stir it in during the cooking process for a firmer set.
  4. Test the Jam: To test if the jam is ready, place a spoonful on a cold plate and let it sit for a minute. If it wrinkles when you push it with your finger, the jam is ready. If not, continue simmering for a few more minutes and test again.
  5. Add Vanilla (Optional): Stir in the vanilla extract, if using, for an extra layer of flavor.
  6. Store the Jam: Once the jam has reached your desired consistency, remove it from the heat and carefully ladle it into sterilized jars. Seal the jars and allow them to cool to room temperature. Store in the refrigerator for up to 3 weeks or process the jars in a water bath for longer storage.

Enjoy this homemade Cherry Jam on toast, in desserts, or as a sweet addition to your breakfast table!
