CHERRY CHEESECAKE COOKIES

Cherry Cheesecake Cookies are the perfect combination of creamy cheesecake and sweet cherries, packed into a delightful cookie form. These soft, buttery cookies feature a creamy cheesecake filling and a dollop of cherry pie filling on top. They’re a delicious, bite-sized treat that’s perfect for any occasion, especially for cheesecake lovers!

Ingredients:

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract

  • 1 can (about 21 oz) cherry pie filling (you can also use homemade cherry filling)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

    In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

  3. Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy. Set aside.
  4. Form the Cookies: Roll the cookie dough into 1 ½-inch balls and place them onto the prepared baking sheet, spacing them about 2 inches apart. Using your thumb or the back of a spoon, create an indentation in the center of each cookie.
  5. Fill the Cookies: Spoon about 1 teaspoon of the cheesecake filling into the indentation of each cookie. Then, top the cheesecake filling with 1 or 2 cherries from the cherry pie filling.
  6. Bake the Cookies: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set. Be careful not to overbake, as the cookies should remain soft.
  7. Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
