Cheesy Beef Taco Dip

  • 1 package (8 oz) cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sliced jalapeños (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • Tortilla chips, for serving

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat.
  3. Add the taco seasoning mix to the beef, following the package instructions for seasoning. Stir in the diced tomatoes with green chilies and cook for an additional 2-3 minutes, until heated through.
  4. In a mixing bowl, combine the refried beans, cream cheese, and sour cream. Stir until smooth and well combined.
  5. Spread the bean mixture evenly in the bottom of a 9×13-inch baking dish.
