Ingredients:
- 2 tbsp vegetable oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 2 carrots, grated
- 2 tomatoes, chopped
- 1 can (14.5 oz) baked beans in tomato sauce
- 1 tbsp curry powder
- 1 tsp paprika
- 1 tsp chili powder (optional, for extra heat)
- Salt and pepper, to taste
- 1 tsp sugar (optional)
- Fresh cilantro, for garnish (optional)
Instructions:
- Heat the vegetable oil in a large pan over medium heat. Add the onion and bell peppers, and sauté for 5-7 minutes until softened.
- Stir in the garlic and grated carrots, and cook for another 2 minutes until fragrant.
