Cauliflower Fritters Recipe

Ingredients:

  • 1 medium cauliflower head, cut into small florets
  • 2 large eggs
  • ½ cup all-purpose flour (or gluten-free flour for a GF option)
  • ¼ cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp baking powder
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Olive oil or vegetable oil for frying
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Cauliflower: Bring a pot of salted water to a boil and add the cauliflower florets. Cook for 5-6 minutes until tender. Drain well and pat dry with a paper towel.
  2. Mash the Cauliflower: Use a potato masher or fork to gently mash the cooked cauliflower, leaving some texture for a satisfying bite.
  3. Prepare the Batter: In a large mixing bowl, combine the eggs, flour, Parmesan cheese, green onions, garlic, baking powder, paprika, salt, and black pepper. Add the mashed cauliflower and mix until well combined.
  4. Form the Fritters: Scoop a heaping tablespoon of the mixture and shape it into a patty. Repeat until all the batter is used.
  5. Fry the Fritters: Heat oil in a large skillet over medium heat. Fry the patties for 3-4 minutes on each side or until golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.
  6. Drain and Serve: Transfer the cooked fritters to a plate lined with paper towels to remove excess oil. Garnish with fresh parsley if desired.

Serving Suggestions: Serve warm with a dollop of sour cream, a squeeze of lemon, or your favorite dipping sauce. Enjoy these fritters as a snack, side dish, or part of a veggie platter!
