Carrot Oatmeal Cookies

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed

  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
