Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup milk or buttermilk
  • 1 1/2 cups grated carrots (about 2-3 medium carrots)
  • 1/2 cup chopped walnuts or raisins (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine the Wet Ingredients: In a separate bowl, beat the eggs, granulated sugar, and brown sugar until well combined. Stir in the vegetable oil, vanilla extract, and milk until smooth.
  4. Add the Carrots: Gently fold the grated carrots into the wet mixture. If using walnuts or raisins, stir them in at this point.
  5. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix the batter.
  6. Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy your moist and flavorful Carrot Muffins as a healthy, delicious snack or breakfast treat!
