Carrot Jam

Carrot Jam is a unique and delightful preserve that transforms the humble carrot into a sweet, spreadable treat. Ingredients:

  • 1 lb carrots, peeled and grated
  • 1 1/2 cups granulated sugar
  • 1 lemon, juiced and zested
  • 1 orange, juiced and zested
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves (optional)
  • 1/2 cup water

Instructions:

  1. In a medium saucepan, combine the grated carrots, sugar, lemon juice and zest, orange juice and zest, ginger, cinnamon, cloves, and water.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
  3. Reduce the heat to low and simmer for 30-40 minutes, or until the carrots are tender and the jam has thickened to your desired consistency.
  4. Remove from heat and let the jam cool slightly before transferring it to sterilized jars.
  5. Allow the jars to cool completely before sealing and refrigerating. The jam will keep in the refrigerator for up to two weeks.
