Ingredients:

  • 1 cup grated carrots
  • 1 cup pitted dates
  • 1 cup rolled oats
  • ½ cup walnuts
  • ½ cup shredded coconut (unsweetened)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • 1 tbsp coconut oil (optional)
  • Pinch of salt
  • Extra shredded coconut for rolling (optional)

Instructions:

  1. Prep the ingredients: Grate the carrots using a fine grater and set aside. If your dates are a bit dry, soak them in warm water for 10 minutes and drain before using.
