Ingredients:

  • 1 1/2 cups long-grain white rice
  • 1 tablespoon vegetable oil or coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red, yellow, or green), chopped
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground thyme or 1 teaspoon fresh thyme leaves
  • 1 can (14 oz) coconut milk
  • 1 1/4 cups chicken or vegetable broth
  • 1 cup canned black beans, drained and rinsed (optional)
  • 1/2 cup chopped fresh pineapple (optional)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped, for garnish
  • Lime wedges for serving

Instructions:

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming too sticky.
  2. Sauté the Aromatics: In a large saucepan or skillet, heat the oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until the onion is translucent and the vegetables are softened, about 5 minutes.
  3. Add the Spices: Stir in the ground turmeric, allspice, and thyme, and cook for another minute until the spices are fragrant.
  4. Cook the Rice: Add the rinsed rice to the pan and stir to coat it with the oil and spices. Pour in the coconut milk and broth, and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let the rice simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Add Beans and Pineapple (Optional): If using, gently fold in the black beans and chopped pineapple into the cooked rice. Cook for an additional 2-3 minutes until heated through.
  6. Season and Serve: Season the rice with salt and pepper to taste. Fluff the rice with a fork and garnish with chopped fresh cilantro or parsley. Serve with lime wedges on the side.

Caribbean Rice is a perfect way to bring the tropical flavors of the Caribbean into your home. It’s a versatile dish that can be customized with your favorite ingredients, making it a perfect accompaniment to any meal. Enjoy the vibrant and exotic tastes of this delightful dish!
