Caramelized Onion and Mushroom Tart

Ingredients:

  • 1 sheet puff pastry (thawed if frozen)
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 8 oz mushrooms (such as cremini or button), sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • 1 tbsp balsamic vinegar
  • ½ cup shredded Gruyère or Swiss cheese (optional)
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat oven: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and place it on a parchment-lined baking sheet. Score a 1-inch border around the edges of the pastry, being careful not to cut all the way through. Set aside.
  2. Caramelize the onions: In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, for about 25-30 minutes until they are golden brown and caramelized. If the onions start to stick, add a splash of water. Once caramelized, stir in the balsamic vinegar and cook for another minute. Set the onions aside.
  3. Cook the mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium and add the sliced mushrooms. Sauté for 5-7 minutes until the mushrooms are soft and golden. Add the minced garlic and thyme, and cook for another minute. Season with salt and pepper to taste.
  4. Assemble the tart: Spread the caramelized onions evenly over the center of the puff pastry, leaving the scored edges clear. Top the onions with the sautéed mushrooms. If using cheese, sprinkle it evenly over the top.
  5. Bake: Brush the edges of the pastry with the beaten egg to give it a golden, shiny finish. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
  6. Serve: Allow the tart to cool slightly before slicing. Serve warm or at room temperature.

This Caramelized Onion and Mushroom Tart is delicious on its own or paired with a fresh salad for a complete meal. Enjoy!
