Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and peppermint extracts.
  4. Combine the dough: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the crushed candy canes.
  5. Shape the dough: On the prepared baking sheet, shape the dough into a log about 12 inches long and 3 inches wide. Flatten the top slightly.
