Candied Pumpkin Seeds

Candied pumpkin seeds are a delicious and easy-to-make treat that perfectly captures the flavors of fall. These sweet and crunchy seeds are coated in a caramelized sugar mixture with hints of cinnamon, nutmeg, and a pinch of salt for balance. Ingredients:

  • 1 cup raw pumpkin seeds (cleaned and dried)
  • ½ cup granulated sugar
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 tablespoon water

Instructions:

  1. Prepare the Pumpkin Seeds: Preheat your oven to 300°F (150°C). Spread the cleaned and dried pumpkin seeds on a baking sheet lined with parchment paper. Roast the seeds in the oven for about 15-20 minutes, stirring occasionally until they are lightly golden and dry.
  2. Make the Candy Coating: In a medium skillet, combine the sugar, butter, cinnamon, nutmeg, salt, and water. Heat over medium heat, stirring constantly until the butter is melted and the sugar is fully dissolved, forming a syrup.
  3. Candy the Seeds: Add the roasted pumpkin seeds to the skillet and stir to coat them evenly with the syrup. Continue to cook, stirring frequently, for about 5-7 minutes or until the sugar mixture has thickened and starts to caramelize around the seeds.
  4. Cool and Separate the Seeds: Transfer the candied seeds back to the parchment-lined baking sheet, spreading them out in a single layer. Let them cool completely. As they cool, they will harden and develop a crunchy texture. Break apart any clumps with your fingers.
  5. Store and Enjoy: Once fully cooled, store the candied pumpkin seeds in an airtight container at room temperature for up to two weeks. Enjoy them as a snack or use them to add a sweet crunch to various dishes!
