Butterscotch Bars

If you’re looking for a dessert that combines the rich, buttery flavor of butterscotch with the satisfying chew of a bar cookie, these Butterscotch Bars are perfect for you. Packed with brown sugar and hints of vanilla, these bars have a soft, melt-in-your-mouth texture and a deep caramelized flavor. They’re a crowd-pleaser for any occasion, whether it’s a holiday gathering or a simple weeknight treat. Best of all, they’re incredibly easy to make, requiring just a handful of pantry staples.

Ingredients:

  • 1 cup (2 sticks) unsalted butter, melted and cooled
  • 2 cups packed light brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Mix the wet ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, whisking until well combined.
  3. Combine the dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  4. Fold in the butterscotch chips: Gently fold the butterscotch chips into the batter, ensuring even distribution.
  5. Bake the bars: Pour the batter into the prepared pan and spread it out evenly. Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and cut: Allow the bars to cool completely in the pan. Once cool, use the parchment overhang to lift them out, then cut into squares or rectangles.

Serving Suggestions: These bars are delicious on their own but can be elevated with a scoop of vanilla ice cream or a drizzle of caramel sauce. Store leftovers in an airtight container at room temperature for up to 5 days.
