BUTTERNUT SQUASH PIE

Butternut Squash Pie is a delightful and slightly unexpected twist on the traditional pumpkin pie. This pie is creamy, rich, and full of warm spices, making it perfect for fall and winter gatherings. The naturally sweet butternut squash pairs beautifully with cinnamon, nutmeg, and cloves, creating a comforting dessert that’s sure to impress.

Ingredients:

For the Pie Filling:

  • 1 medium butternut squash (about 2 cups of puree)
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

For the Pie Crust:

  • 1 unbaked 9-inch pie crust (homemade or store-bought)

Instructions:

  1. Prepare the Butternut Squash:
    • Preheat your oven to 375°F (190°C).
    • Cut the butternut squash in half lengthwise and scoop out the seeds. Place the halves cut side down on a baking sheet lined with parchment paper.
    • Roast the squash in the preheated oven for 45-60 minutes, or until the flesh is tender and easily pierced with a fork.
    • Once the squash is cool enough to handle, scoop out the flesh and puree it in a blender or food processor until smooth. Measure out 2 cups of the puree for the pie filling.
  2. Prepare the Pie Filling:
    • In a large mixing bowl, combine the butternut squash puree, brown sugar, eggs, heavy cream, milk, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt. Whisk until the mixture is smooth and well combined.
  3. Assemble the Pie:
    • Roll out your pie crust and fit it into a 9-inch pie dish. Trim and crimp the edges as desired.
    • Pour the butternut squash filling into the prepared pie crust, spreading it out evenly.
  4. Bake the Pie:
    • Preheat the oven to 350°F (175°C). Place the pie on the middle rack of the oven and bake for 50-60 minutes, or until the filling is set and a toothpick inserted into the center comes out clean. The crust should be golden brown.
  5. Cool and Serve:
    • Allow the pie to cool completely on a wire rack before slicing. This will help the filling set and make it easier to slice.
    • Serve the pie at room temperature or chilled, topped with a dollop of whipped cream if desired.

Enjoy this Butternut Squash Pie as a unique and delicious alternative to traditional holiday pies. Its smooth texture and warm spices make it a comforting and memorable dessert!
