Buffalo Chicken Grilled Cheese

This Buffalo Chicken Grilled Cheese takes a classic comfort food and amps it up with the bold, spicy flavors of buffalo sauce and tender shredded chicken. Creamy, melted cheddar and mozzarella cheeses pair perfectly with the tangy heat of buffalo sauce, all sandwiched between golden, crispy slices of buttered bread. This sandwich is a great way to satisfy your cravings for something indulgent and flavorful, perfect for a game day snack, lunch, or even a quick weeknight dinner. The creamy ranch or blue cheese dressing added into the mix balances out the heat, making each bite irresistible.

Ingredients:

  • 1 cup cooked, shredded chicken
  • 2 tablespoons buffalo sauce (or more to taste)
  • 1/4 cup ranch or blue cheese dressing
  • 4 slices of bread (sourdough or your favorite sandwich bread)
  • 2 tablespoons butter, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions:

  1. Prepare the chicken: In a bowl, toss the shredded chicken with buffalo sauce until fully coated. Set aside.
  2. Butter the bread: Spread softened butter on one side of each slice of bread.
  3. Assemble the sandwiches: On the non-buttered side of two slices of bread, layer some of the shredded cheddar and mozzarella cheese. Top with a portion of the buffalo chicken mixture and drizzle with ranch or blue cheese dressing. Add more cheese on top, then cover with the other slices of bread, buttered side facing up.
  4. Grill the sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, until the bread is golden and crispy and the cheese is fully melted.
  5. Serve: Slice the sandwiches in half and serve warm, with extra buffalo sauce or dressing for dipping if desired.

Enjoy your spicy, cheesy Buffalo Chicken Grilled Cheese!
