BRUSSELS SPROUTS AND BACON GRATIN

Brussels Sprouts and Bacon Gratin is a decadent and savory side dish, perfect for holiday meals or special occasions. The roasted Brussels sprouts combine beautifully with crispy bacon and a creamy cheese sauce, topped with breadcrumbs for a crispy finish. It’s a rich and satisfying way to elevate Brussels sprouts.

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 4 slices bacon, chopped
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Gruyère or cheddar cheese
  • 1/4 teaspoon nutmeg (optional)
  • Salt and pepper, to taste
  • 1/4 cup breadcrumbs (panko or regular)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Lightly grease a 9×9-inch baking dish or similar size.
  2. Cook the bacon:
    • In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and set it aside on a paper towel-lined plate to drain. Leave about 1 tablespoon of bacon fat in the skillet.
  3. Roast the Brussels sprouts:
    • Toss the halved Brussels sprouts with a little olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet and roast for 15-20 minutes, or until tender and slightly caramelized.
  4. Make the sauce:
    • In the same skillet with the bacon fat, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes.
    • Stir in the flour and cook for 1 minute to form a roux. Gradually add the heavy cream, whisking constantly to avoid lumps. Let the sauce simmer for 3-4 minutes until it thickens slightly.
    • Stir in the Parmesan, Gruyère (or cheddar), and nutmeg. Season with salt and pepper to taste. Remove the skillet from the heat once the sauce is smooth and creamy.
  5. Assemble the gratin:
    • In the prepared baking dish, combine the roasted Brussels sprouts and crispy bacon. Pour the cheese sauce over the top and gently mix to coat everything evenly.
  6. Add the topping:
    • In a small bowl, mix the breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the top of the Brussels sprouts and cheese sauce.
  7. Bake the gratin:
    • Bake in the preheated oven for 15-20 minutes, or until the top is golden brown and bubbling.
  8. Serve:
    • Garnish with fresh parsley and serve hot as a side dish.
