Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/4 cups packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream the butter and sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together using a hand or stand mixer until light and fluffy, about 2-3 minutes.
  4. Add the wet ingredients: Beat in the egg, egg yolk, and vanilla extract until fully incorporated.
  5. Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing to ensure a tender cookie.
  6. Shape the cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers appear slightly underbaked. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
