Brown Bean Chowder

Brown Bean Chowder is a hearty, comforting dish that’s perfect for cool evenings when you need something warm and filling. This chowder is rich in flavor, combining the earthiness of brown beans with the creaminess of a well-seasoned broth. The addition of vegetables like carrots, celery, and potatoes adds layers of texture and nutrition, while a hint of smoked paprika gives it a subtle smoky depth. Serve it with a slice of crusty bread for a complete, satisfying meal that will warm you from the inside out.

Ingredients:

  • 1 cup dried brown beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 medium potatoes, peeled and cubed
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Prepare the beans: Drain and rinse the soaked brown beans. In a large pot, cover the beans with fresh water and bring to a boil. Reduce the heat and simmer for about 1 hour or until the beans are tender. Drain and set aside.
  2. Sauté the vegetables: In the same large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the garlic, carrots, and celery, and cook for another 5 minutes, stirring occasionally.
  3. Add the potatoes and seasonings: Stir in the cubed potatoes, smoked paprika, and bay leaf. Cook for 2-3 minutes to allow the flavors to develop.
  4. Simmer the chowder: Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
  5. Add the beans and cream: Stir in the cooked brown beans and heavy cream. Continue to cook for another 10 minutes, allowing the chowder to thicken slightly. Season with salt and pepper to taste.
  6. Serve: Ladle the chowder into bowls and garnish with fresh parsley. Serve hot, with crusty bread on the side.

Enjoy the warm, rich flavors of this comforting Brown Bean Chowder!
