Ingredients:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 6 slices of bacon or 6 sausage links, cooked and crumbled
  • 1/2 cup diced vegetables (bell peppers, spinach, onions, or your choice)
  • Salt and pepper, to taste
  • Non-stick cooking spray
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with non-stick cooking spray.
  2. Cook the meat: If using bacon or sausage, cook them in a skillet until crispy. Drain on paper towels and crumble into small pieces.
  3. Prepare the egg mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper. Stir in the shredded cheese, cooked bacon or sausage, and diced vegetables.
  4. Assemble the breakfast cups: Divide the egg mixture evenly among the prepared muffin cups, filling each about 3/4 full.
  5. Bake: Place the muffin tin in the oven and bake for 15-20 minutes, or until the eggs are set and lightly golden on top.
  6. Serve: Allow the Breakfast Cups to cool slightly before removing them from the muffin tin. Garnish with fresh parsley if desired and serve warm.
