Booyah Chicken is a classic Midwestern stew, originating from Belgian immigrants in the Green Bay, Wisconsin area. This hearty, slow-cooked dish is often made in large batches for gatherings, featuring tender chicken, a rich broth, and a medley of vegetables. The combination of chicken and slow-simmered vegetables results in a comforting and flavorful dish, perfect for cool evenings or large family dinners. Ingredients:
- 1 whole chicken (about 4-5 lbs), cut into pieces
- 8 cups chicken broth
- 4 medium potatoes, peeled and diced
- 4 carrots, peeled and sliced
- 3 celery stalks, chopped
- 1 large onion, diced
- 1 green bell pepper, chopped
- 2 cups cabbage, shredded
- 1 can (15 oz) diced tomatoes
- 1 cup frozen peas
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- 1/2 cup pearl barley or rice (optional)
- 1 tbsp olive oil
Instructions:
- In a large stockpot, heat olive oil over medium heat. Add the chicken pieces and brown on all sides. Once browned, remove the chicken and set it aside.
- In the same pot, add the onions, celery, carrots, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
- Return the chicken to the pot and add the chicken broth, diced tomatoes, bay leaves, thyme, paprika, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the chicken is tender and falling off the bone.
- Remove the chicken from the pot. Let it cool slightly, then shred the meat and discard the bones and skin. Return the shredded chicken to the pot.
- Add the potatoes, cabbage, and barley (if using). Continue to simmer for an additional 30-40 minutes, until the potatoes and barley are tender.
- Stir in the frozen peas in the last 10 minutes of cooking. Adjust seasoning with more salt and pepper if needed.
- Serve hot with crusty bread for a complete meal.
