Boiled Fruit Cake
Ingredients:
- 1 cup mixed dried fruit (raisins, sultanas, currants, chopped apricots, etc.)
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup water
- 1/4 cup orange juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 2 large eggs, lightly beaten
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions:
- Preheat your oven to 325°F (160°C) and line a 9-inch round or square cake pan with parchment paper.
- In a large saucepan, combine the mixed dried fruit, butter, brown sugar, water, orange juice, cinnamon, nutmeg, cloves, and baking soda.
- Bring the mixture to a boil over medium heat, stirring occasionally. Once it reaches a boil, reduce the heat and simmer for 5 minutes. Remove the pan from the heat and let the mixture cool for 10-15 minutes.
- Once the fruit mixture has cooled slightly, stir in the lightly beaten eggs until fully combined.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the fruit mixture, mixing until just combined. If desired, fold in the chopped nuts for added texture.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
