Blueberry Pie

Blueberry Pie is a classic dessert that perfectly captures the sweet and tangy flavors of fresh blueberries in a flaky, buttery crust. Ingredients:

For the Crust:

  • 2 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon butter, cut into small pieces

For the Topping:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions:

  1. Prepare the Crust:
    • In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing just until the dough comes together. Divide the dough into two discs, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Make the Filling:
    • In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, lemon zest, cinnamon, and salt. Toss gently to mix.
  3. Assemble the Pie:
    • Preheat your oven to 400°F (200°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and fill with the blueberry mixture. Dot with butter. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges, then cut slits in the top crust to vent.
  4. Bake:
    • Brush the top crust with the beaten egg and sprinkle with coarse sugar if desired. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  5. Cool and Serve:
    • Let the pie cool completely before slicing to allow the filling to set.
