Blueberry Lemon Pie

Ingredients:

  • ¾ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp all-purpose flour
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • ½ tsp vanilla extract
  • 1 tbsp unsalted butter, melted

For the topping (optional):

  • Powdered sugar for dusting

Instructions:

  1. Make the crust: In a large bowl, combine the flour, sugar, and salt. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, until the dough comes together. Form the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prepare the filling: In a large bowl, mix the blueberries, sugar, cornstarch, flour, lemon zest, lemon juice, and vanilla extract. Stir gently until the blueberries are evenly coated.
