These Blueberry Bars are a delightful combination of a buttery, crumbly crust and a luscious blueberry filling. Perfect for breakfast, a snack, or dessert, they offer a delicious balance of sweet and tart flavors. The buttery oat base provides a rich, hearty texture, while the blueberry layer brings freshness and brightness. Ingredients:

  • 2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cut into cubes
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1/3 cup granulated sugar (for blueberry layer)
  • 1 tablespoon cornstarch

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Prepare the crumb mixture: In a medium bowl, combine flour, oats, sugar, baking powder, and salt. Add the cold butter and vanilla extract, using a pastry cutter or your hands to blend until the mixture becomes coarse and crumbly.
  3. Assemble the base: Press about two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan. Set the remaining crumb mixture aside for the topping.
  4. Prepare the blueberry filling: In a small saucepan, combine blueberries, lemon juice, sugar, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens slightly and the berries release their juices, about 5-7 minutes.
  5. Layer the bars: Spread the blueberry mixture evenly over the crust in the pan. Sprinkle the remaining crumb mixture over the blueberry layer.
  6. Bake: Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the blueberry filling is bubbling.
  7. Cool and serve: Allow the bars to cool completely in the pan before cutting into squares. Enjoy them on their own or with a dollop of whipped cream or a scoop of vanilla ice cream.

These bars can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
