BLUEBERRY AND RASPBERRY MUFFINS

Blueberry and Raspberry Muffins are a delightful combination of two classic berries that create a burst of flavor in every bite. These muffins are moist, tender, and slightly sweet, with juicy blueberries and tart raspberries scattered throughout. Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup plain yogurt (or sour cream)
  • 3/4 cup fresh or frozen blueberries
  • 3/4 cup fresh or frozen raspberries
  • Optional: 2 tablespoons coarse sugar for sprinkling on top

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In a separate large bowl, whisk together the melted butter and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, milk, and yogurt until well combined.
  4. Fold in the berries: Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix. Gently fold in the blueberries and raspberries, being cautious not to break the berries too much.
  5. Scoop and bake: Divide the batter evenly among the muffin cups, filling each about 3/4 full. If desired, sprinkle the tops with coarse sugar for a crunchy topping. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Cool and serve: Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
