Blueberry Almond Scones

Ingredients:

  • 2 cups all-purpose flour

  • 1 cup fresh or frozen blueberries
  • 1 tsp almond extract
  • ¾ cup heavy cream (plus extra for brushing)
  • 1 large egg

For the glaze (optional):

  • ½ cup powdered sugar
  • 1-2 tbsp milk
  • ¼ tsp almond extract

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Add blueberries and almonds: Gently fold in the blueberries and toasted sliced almonds.
  4. Combine the wet ingredients: In a small bowl, whisk together the heavy cream, egg, and almond extract. Add the wet mixture to the dry ingredients and stir until just combined, being careful not to overmix.
  5. Shape the dough: Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick round. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  6. Brush and bake: Brush the tops of the scones with a little extra heavy cream and bake for 18–22 minutes, or until the scones are golden brown and cooked through.
  7. Make the glaze (optional): In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth. Drizzle the glaze over the cooled scones.
