Blt Macaroni Salad

BLT Macaroni Salad combines the classic flavors of a BLT sandwich with the creamy, comforting texture of macaroni salad, making it a perfect dish for summer picnics or potlucks. The crispy bacon, fresh lettuce, and juicy tomatoes provide a delightful contrast to the tender pasta, while the creamy dressing ties everything together with just the right amount of tang. It’s a refreshing twist on both macaroni salad and a BLT, creating a dish that’s hearty yet light enough for warm-weather meals.

Ingredients:

  • 2 cups elbow macaroni
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 6 slices bacon, cooked and crumbled
  • 1 cup romaine lettuce, chopped
  • 1/4 cup green onions, sliced (optional)

Instructions:

  1. Cook the macaroni: Boil the elbow macaroni in salted water according to the package directions. Drain and rinse with cold water to cool it down. Set aside.
  2. Prepare the dressing: In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
  3. Assemble the salad: In a large mixing bowl, combine the cooked macaroni, cherry tomatoes, crumbled bacon, and lettuce. Add the dressing and toss gently to coat everything evenly.
  4. Chill and serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, garnish with sliced green onions if desired.

Enjoy this cool, creamy, and bacon-filled delight!
