Blistered Shishito Peppers

Blistered Shishito Peppers are a quick, simple, and delicious appetizer or side dish that offers a delightful mix of flavors and textures. Shishito peppers are generally mild, but occasionally one in ten can have a surprising kick of heat, adding an element of fun to every bite. When blistered in a hot skillet, the peppers become tender with a smoky, charred exterior, and the sprinkling of flaky sea salt enhances their natural flavors. This recipe requires just a few ingredients, making it perfect for a last-minute snack or to accompany any meal. Serve with a squeeze of lemon for a bright finish, or pair with a dipping sauce for extra flavor.

Ingredients:

  • 8 oz Shishito peppers
  • 1 tablespoon olive oil
  • Flaky sea salt, to taste
  • Lemon wedges (optional)

Instructions:

  1. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot.
  2. While the skillet is heating, rinse and dry the Shishito peppers thoroughly to remove any moisture.
  3. Add the olive oil to the hot skillet, swirling to coat the bottom.
  4. Toss the Shishito peppers into the skillet in a single layer. Let them cook undisturbed for 2–3 minutes until blistered on one side.
  5. Use tongs to flip the peppers and continue cooking for another 2–3 minutes, allowing them to blister on all sides.
  6. Once the peppers are evenly charred and tender, remove them from the skillet and transfer to a serving plate.
  7. Sprinkle with flaky sea salt and serve immediately. Optionally, add a squeeze of lemon juice for a zesty finish.
