Blistered Shishito Peppers are a quick, simple, and delicious appetizer or side dish that offers a delightful mix of flavors and textures. Shishito peppers are generally mild, but occasionally one in ten can have a surprising kick of heat, adding an element of fun to every bite. When blistered in a hot skillet, the peppers become tender with a smoky, charred exterior, and the sprinkling of flaky sea salt enhances their natural flavors. This recipe requires just a few ingredients, making it perfect for a last-minute snack or to accompany any meal. Serve with a squeeze of lemon for a bright finish, or pair with a dipping sauce for extra flavor.
Ingredients:
- 8 oz Shishito peppers
- 1 tablespoon olive oil
- Flaky sea salt, to taste
- Lemon wedges (optional)
Instructions:
- Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot.
- While the skillet is heating, rinse and dry the Shishito peppers thoroughly to remove any moisture.
- Add the olive oil to the hot skillet, swirling to coat the bottom.
- Toss the Shishito peppers into the skillet in a single layer. Let them cook undisturbed for 2–3 minutes until blistered on one side.
- Use tongs to flip the peppers and continue cooking for another 2–3 minutes, allowing them to blister on all sides.
- Once the peppers are evenly charred and tender, remove them from the skillet and transfer to a serving plate.
- Sprinkle with flaky sea salt and serve immediately. Optionally, add a squeeze of lemon juice for a zesty finish.
Enjoy these blistered Shishito peppers hot, and watch for the occasional spicy surprise!
