BISON STEW

Bison Stew is a hearty and flavorful dish that showcases the rich, slightly sweet flavor of bison meat. Known for being leaner than beef, bison is an excellent choice for a comforting stew packed with vegetables and a savory broth. Ingredients:

  • 1 1/2 lbs bison stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 3 medium potatoes, diced
  • 2 celery stalks, chopped
  • 1/4 cup all-purpose flour (or gluten-free alternative)
  • 4 cups beef or vegetable broth
  • 1 cup red wine (optional, or substitute with more broth)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

  1. Sear the bison: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the bison meat with salt and pepper, then sear it in batches until browned on all sides. Remove the bison from the pot and set aside.
  2. Sauté the vegetables: In the same pot, add the chopped onion, garlic, carrots, potatoes, and celery. Sauté for 5-7 minutes until the vegetables begin to soften and the onions are translucent.
  3. Add the flour and liquids: Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes, then add the beef or vegetable broth, red wine (if using), and tomato paste. Stir to combine, scraping up any browned bits from the bottom of the pot.
  4. Simmer the stew: Return the browned bison to the pot. Add the bay leaves, thyme, smoked paprika, and a little more salt and pepper. Bring the stew to a simmer, then reduce the heat to low, cover, and cook for 1 1/2 to 2 hours, or until the bison is tender and the flavors have melded together. Stir occasionally.
  5. Adjust seasoning and serve: Taste the stew and adjust seasoning as needed. Remove the bay leaves and ladle the stew into bowls. Garnish with fresh parsley before serving.
