Bhindi Masala

Bhindi Masala is a flavorful and popular Indian dish made with tender okra (bhindi) sautéed in a rich, spiced tomato-onion gravy. The combination of earthy spices like cumin, coriander, turmeric, and garam masala perfectly complements the natural sweetness of the okra, resulting in a delicious, slightly tangy, and mildly spicy dish. It pairs wonderfully with roti, naan, or even steamed rice. Bhindi Masala is a great choice for a wholesome, vegetarian meal that’s easy to make and packed with traditional Indian flavors.

Ingredients:

  • 500g bhindi (okra), washed, dried, and cut into 1-inch pieces
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 large onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1 tsp dry mango powder (amchur)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat 1 tablespoon of oil in a large pan over medium heat. Add the bhindi and sauté for 7-8 minutes, stirring occasionally until they become lightly browned and tender. Remove and set aside.
  2. In the same pan, add the remaining oil. Add cumin seeds and let them splutter.
  3. Add the chopped onions and green chilies, and sauté until the onions turn golden brown.
  4. Stir in the ginger-garlic paste and cook for another minute until fragrant.
  5. Add the chopped tomatoes and cook until they soften and start to break down, about 5 minutes.
  6. Mix in the coriander powder, turmeric powder, red chili powder, and salt. Cook the masala until the oil begins to separate from the mixture.
  7. Add the sautéed bhindi to the pan, stir well, and cook for another 5-7 minutes, allowing the flavors to combine.
  8. Sprinkle garam masala and dry mango powder, stirring gently to incorporate.
  9. Garnish with fresh cilantro and serve hot with roti or rice.
