Bhindi Masala is a flavorful and popular Indian dish made with tender okra (bhindi) sautéed in a rich, spiced tomato-onion gravy. The combination of earthy spices like cumin, coriander, turmeric, and garam masala perfectly complements the natural sweetness of the okra, resulting in a delicious, slightly tangy, and mildly spicy dish. Ingredients:
- 500g bhindi (okra), washed, dried, and cut into 1-inch pieces
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 2 green chilies, slit
- 1 tsp ginger-garlic paste
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 1 tsp dry mango powder (amchur)
- Salt to taste
- Fresh cilantro for garnish
Instructions:
- Heat 1 tablespoon of oil in a large pan over medium heat. Add the bhindi and sauté for 7-8 minutes, stirring occasionally until they become lightly browned and tender. Remove and set aside.
- In the same pan, add the remaining oil. Add cumin seeds and let them splutter.
- Add the chopped onions and green chilies, and sauté until the onions turn golden brown.
- Stir in the ginger-garlic paste and cook for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften and start to break down, about 5 minutes.
- Mix in the coriander powder, turmeric powder, red chili powder, and salt. Cook the masala until the oil begins to separate from the mixture.
- Add the sautéed bhindi to the pan, stir well, and cook for another 5-7 minutes, allowing the flavors to combine.
- Sprinkle garam masala and dry mango powder, stirring gently to incorporate.
- Garnish with fresh cilantro and serve hot with roti or rice.
