BEETROOT AND WALNUT SALAD

Ingredients:

  • 4 medium-sized beets, peeled and cut into wedges

  • 1/2 cup walnuts, toasted
  • 4 cups mixed greens (such as arugula, spinach, or baby kale)
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 red onion, thinly sliced
  • 1 tbsp fresh orange juice
  • 1 tbsp balsamic vinegar
  • 1 tsp honey (optional)
  • 1 tbsp olive oil (for the dressing)

Instructions:

  1. Roast the Beets: Preheat your oven to 400°F (200°C). Toss the beetroot wedges with 1 tablespoon of olive oil, salt, and pepper, then spread them on a baking sheet in a single layer. Roast for 30-35 minutes, or until tender when pierced with a fork. Let the beets cool slightly.
