BEEF RAGOUT

Beef Ragout is a hearty, flavorful stew made with tender chunks of beef simmered in a rich, savory sauce of tomatoes, wine, and aromatic herbs. This dish, typically served over pasta, polenta, or mashed potatoes, is perfect for a cozy dinner or a special occasion. Ingredients:

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tbsp olive oil

  • 1 cup red wine
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta, polenta, or mashed potatoes (for serving)

Instructions:

  1. Brown the Beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove the beef and set it aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion, carrots, and celery. Cook for 5-6 minutes, or until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Deglaze with Wine: Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom of the pot. Let the wine simmer for 3-4 minutes to reduce slightly.
  4. Add the Remaining Ingredients: Stir in the beef broth, diced tomatoes, tomato paste, thyme, rosemary, bay leaf, and a pinch of salt and pepper. Return the browned beef to the pot and bring the mixture to a simmer.
  5. Simmer the Ragout: Cover the pot, reduce the heat to low, and let the ragout simmer gently for 2-2.5 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  6. Serve: Discard the bay leaf and adjust the seasoning with salt and pepper to taste. Serve the beef ragout over cooked pasta, polenta, or mashed potatoes. Garnish with fresh parsley.
