Bean Curry

Ingredients

  • 1 tsp garam masala
  • 1/2 tsp chili powder (optional, for heat)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 tsp salt (adjust to taste)
  • Fresh cilantro for garnish
  • Cooked rice or gluten-free flatbread, for serving

Instructions

  1. Sauté the aromatics: Heat the oil in a large skillet over medium heat. Add the chopped onion and sauté for 4-5 minutes until softened. Stir in the garlic and ginger and cook for another minute until fragrant.
  2. Add the spices: Stir in the cumin, coriander, turmeric, garam masala, and chili powder (if using). Cook the spices for 1-2 minutes, stirring constantly to prevent burning and to bring out their flavors.
  3. Add tomatoes and coconut milk: Pour in the diced tomatoes and coconut milk, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes to allow the flavors to meld.
  4. Add the beans: Stir in the chickpeas and kidney beans, making sure they are evenly coated with the sauce. Simmer for another 10-15 minutes until the sauce thickens slightly and the beans are heated through. Season with salt to taste.
  5. Serve: Garnish the bean curry with fresh cilantro and serve hot with cooked rice or gluten-free flatbread.
