Banana Protein Muffins

Banana Protein Muffins are a nutritious and delicious snack that perfectly blends health and flavor. Ingredients:

  • 2 ripe bananas, mashed

  • 1 cup whole wheat flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 teaspoon baking soda

  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat and prepare:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups lightly with cooking spray.
  2. Mix wet ingredients:
    • In a large mixing bowl, combine the mashed bananas, honey, Greek yogurt, milk, egg, and vanilla extract. Whisk together until smooth and well combined.
  3. Add dry ingredients:
    • To the wet mixture, add the whole wheat flour, protein powder, baking soda, cinnamon, and salt. Mix until just combined. Be careful not to overmix as this can make the muffins tough.
  4. Fold in nuts:
    • If using, fold in the chopped walnuts, distributing them evenly throughout the batter.
  5. Bake the muffins:
