Banana Granola

This Banana Granola is a delightful way to start your morning or to enjoy as a snack throughout the day. Packed with the natural sweetness of bananas, hearty oats, and crunchy nuts, it’s a perfect balance of flavor and texture. The recipe is versatile, allowing you to customize with your favorite add-ins like chocolate chips, dried fruit, or coconut flakes. Ingredients:

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped nuts (such as almonds, pecans, or walnuts)
  • 1/2 cup shredded unsweetened coconut (optional)
  • 1/4 cup chia seeds or flaxseeds (optional)
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 ripe bananas, mashed
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil or melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup dried fruit or chocolate chips (optional, added after baking)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
  2. Mix Dry Ingredients:
    In a large mixing bowl, combine the oats, nuts, shredded coconut, chia or flaxseeds (if using), salt, and cinnamon.
  3. Prepare Wet Ingredients:
    In a medium bowl, mash the bananas until smooth. Stir in the honey (or maple syrup), coconut oil, and vanilla extract until fully combined.
  4. Combine and Coat:
    Pour the wet ingredients over the dry mixture and mix thoroughly, ensuring all the oats and nuts are coated.
  5. Bake the Granola:
    Spread the granola mixture evenly onto the prepared baking sheet. Bake for 25–30 minutes, stirring every 10 minutes to ensure even toasting. The granola should be golden brown and fragrant.
  6. Cool and Add Extras:
    Remove from the oven and let the granola cool completely on the baking sheet. If using dried fruit or chocolate chips, stir them in once the granola is cool.
  7. Store and Serve:
    Transfer the granola to an airtight container and store at room temperature for up to two weeks. Enjoy with yogurt, milk, or as a standalone snack!
