  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)
  • 1/2 cup chocolate chips (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
  2. Combine Bran and Buttermilk: In a medium bowl, mix the bran cereal and buttermilk together. Let it sit for about 5-10 minutes to soften the bran.
  3. Mix Wet Ingredients: In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Stir until well combined.
  4. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Combine Mixtures: Add the bran mixture to the banana mixture and stir until just combined. Gradually fold in the dry ingredients until no dry flour remains. If desired, fold in the nuts and/or chocolate chips.
  6. Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!

These Banana Bran Muffins are a delicious way to enjoy a nutritious treat, providing a boost of energy and flavor that will keep you satisfied throughout the day!
