Balsamic Brussels Sprouts

Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey (optional for added sweetness)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ¼ cup Parmesan cheese, grated (optional for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, salt, and pepper until well coated.
  3. Spread the Brussels sprouts in a single layer on the prepared baking sheet.
  4. Roast in the oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are golden brown and crispy on the edges.
  5. In the last 5 minutes of roasting, drizzle the balsamic vinegar (and honey if using) over the Brussels sprouts and toss to coat.
  6. Remove from the oven, and if desired, sprinkle with freshly grated Parmesan cheese before serving.
