Baked Hasselback Potatoes

Baked Hasselback potatoes are a visually stunning and delicious side dish that combines the crispiness of potato chips with the soft, tender center of a baked potato. Thin, evenly spaced slices are cut into the potato, allowing them to fan out during baking, creating maximum surface area for crisping. A drizzle of butter or olive oil enhances their flavor and helps them achieve that perfect golden-brown finish. These potatoes can be dressed up with herbs, garlic, cheese, or sour cream, making them a versatile side for any meal—from a simple weeknight dinner to a festive holiday spread.

Ingredients:

  • 4 medium-sized russet or Yukon Gold potatoes
  • 3 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme or rosemary (optional)
  • ¼ cup grated Parmesan cheese (optional)
  • Sour cream or chives for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the potatoes: Wash the potatoes thoroughly and pat them dry. Place a potato between two wooden spoons or chopsticks to prevent cutting all the way through, then carefully slice the potato into thin, even slices, stopping about ¼ inch from the bottom.
  3. Season the potatoes: In a small bowl, mix the olive oil (or butter) with the minced garlic, salt, and pepper. Brush the potatoes generously with the mixture, making sure to get some oil between the slices. Sprinkle with fresh thyme or rosemary if desired.
  4. Bake: Place the potatoes on the prepared baking sheet and bake for 45-60 minutes, or until the potatoes are golden and crispy on the edges, and tender on the inside. Brush them with more oil halfway through cooking for extra crispiness.
  5. Add toppings (optional): In the last 10 minutes of baking, sprinkle grated Parmesan cheese over the potatoes for an extra savory touch.
  6. Serve: Remove the potatoes from the oven and garnish with sour cream, chives, or your favorite toppings. Serve hot.

Baked Hasselback potatoes are crispy, flavorful, and a great way to elevate a simple potato side dish into something special!
