Baked Egg Boats

Baked Egg Boats are a fun and delicious way to enjoy a hearty breakfast or brunch. Hollowed-out bread loaves are filled with a creamy egg mixture, cheese, and your favorite add-ins like bacon, ham, or vegetables. Baked to perfection, the result is a golden, crispy exterior with a soft, savory filling inside. These egg boats are easy to customize and are perfect for feeding a crowd or preparing ahead for a busy morning.

Ingredients:

  • 4 small French or sourdough baguettes
  • 6 large eggs
  • 1/2 cup heavy cream or milk
  • 1/2 cup shredded cheddar or Swiss cheese
  • 1/2 cup cooked bacon, ham, or sausage (optional)
  • 1/4 cup chopped green onions or spinach (optional)
  • Salt and pepper, to taste
  • 2 tbsp butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cut the tops off the baguettes and hollow out the center, leaving about 1/2 inch of bread around the edges to form a boat. Place the hollowed-out baguettes on the baking sheet.
  3. In a bowl, whisk together the eggs, cream, cheese, salt, and pepper. Stir in your choice of add-ins, like bacon, ham, or vegetables.
  4. Pour the egg mixture into each baguette boat, filling them evenly. Brush the outside of the bread with melted butter for a crispy finish.
  5. Bake for 20-25 minutes, or until the eggs are set and the bread is golden brown.
