Baked Chicken Enchiladas

Ingredients:

    • 1 teaspoon ground cumin

    • 8–10 medium flour or corn tortillas
    • 1 can (10 oz) red or green enchilada sauce
    • 1 cup shredded Mexican cheese blend
  • Optional toppings:

    • Sliced green onions
    • Diced avocado
    • Sour cream
    • Jalapeño slices

Instructions:

  1. Preheat the oven: Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the filling: In a large bowl, mix the shredded chicken, sour cream, cheddar cheese, Monterey Jack cheese, diced green chilies, cumin, chili powder, garlic powder, salt, and pepper until well combined.
  3. Assemble the enchiladas: Lay a tortilla flat and spoon about 1/3 cup of the chicken filling into the center. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
