This dish is perfect for when you want something indulgent and satisfying. The smoky bacon elevates the traditional macaroni and cheese, providing a delicious contrast to the velvety cheese sauce. Whether you’re preparing it for a cozy weeknight dinner or serving it as a side dish at a gathering, this recipe is sure to be a crowd-pleaser.

Ingredients:

  • 8 oz elbow macaroni
  • 8 slices bacon, cooked and crumbled
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Cook the macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on a paper towel-lined plate to drain. Once cool, crumble the bacon into small pieces.
  3. Make the cheese sauce: In a large saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes to form a roux, making sure the flour is fully absorbed. Gradually whisk in the milk and cream, stirring constantly until the mixture thickens, about 3-5 minutes.
  4. Add the cheeses: Reduce the heat to low, and stir in the cheddar, mozzarella, and Parmesan cheeses. Continue to stir until the cheese is fully melted and the sauce is smooth. Season with garlic powder, onion powder, smoked paprika (if using), and salt and pepper to taste.
  5. Combine and bake (optional): Stir the cooked macaroni into the cheese sauce until well-coated. Fold in half of the crumbled bacon. For an extra-crispy topping, you can transfer the mixture to a greased baking dish, top with the remaining bacon, and bake at 350°F (175°C) for 15-20 minutes until golden and bubbly.
  6. Serve: Garnish with fresh parsley and serve immediately. Enjoy the creamy, cheesy goodness with every bite!

This Bacon Mac ‘n Cheese is best enjoyed warm and makes for a comforting meal or a hearty side dish.
