Ingredients

  • 12 oz elbow macaroni or your favorite pasta
  • 6 slices bacon, chopped
  • 2 fresh jalapeños, diced (seeds removed for less heat, if desired)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole milk preferred)
  • 1/2 cup cream cheese
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain. Leave about 1-2 tablespoons of bacon grease in the pan.
  3. Sauté the Jalapeños: In the same skillet with the bacon grease, add the diced jalapeños and sauté for 2-3 minutes until they soften slightly. Remove from heat and set aside with the bacon.
  4. Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux. Slowly whisk in the milk, making sure to eliminate any lumps. Continue cooking, stirring constantly, until the sauce thickens, about 5-6 minutes.
  5. Add the Cheese: Stir in the cream cheese, cheddar cheese, mozzarella cheese, garlic powder, and smoked paprika. Continue stirring until the cheese is fully melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Combine Everything: Add the cooked pasta, crispy bacon, and sautéed jalapeños into the cheese sauce. Stir until everything is well coated.
  7. Serve: Transfer the Bacon Jalapeño Mac and Cheese to a serving dish and garnish with fresh cilantro or green onions if desired. Serve hot and enjoy the perfect balance of creamy, cheesy goodness with smoky bacon and spicy jalapeños!

This Bacon Jalapeño Mac and Cheese is a deliciously comforting dish with just the right amount of heat and crunch, making it an unforgettable twist on a classic favorite!
